We’ve received some terrific ideas from our members for Food Optimising party food – just in time for the festive season! From tasty aubergine dip to yummy breaded mushrooms to dunk, here are some quick and easy recipes for you to impress
your guests...

Roasted aubergine dip

Member Georgina Davies from Bristol tells us: “This is a Superfree, easy to make yummy dip that’s great with crudités as a starter and it's especially nice as a ‘side’ dip with the turkey burgers from the 100 Free Original Recipes book!”

Serves: 2
Syns per serving: Free on Green, Original and Extra Easy
Cooking time: 40 minutes
Preparation time: 5 minutes

Ingredients:
1 large aubergine
2 heaped tbsp Quark skimmed milk soft cheese
1 tsp ground cumin
1 tsp ground coriander
Fresh coriander to garnish

Method:

1.

Preheat the oven to 220°C/Gas 7. Cut the top stalk off the aubergine and then slice it in half lengthways.

2.

Place skin side down on a baking tray and bake for 30-40 minutes until soft, then leave to cool.

3.

Once cool, scoop out the flesh and blitz in a blender until smooth, add the spices and quark and blend until well mixed, enjoy!

Cajun breaded mushrooms

Jenny Cook from Manningtree in Essex tells us “I made these when experimenting for a tasting session in group - they were extremely successful and vanished in a matter on seconds! Friends love them too and can't believe they're ‘allowed’ on my eating plan.”

Serves: 2
Syns per serving: 3 Syns on Green, Original and Extra Easy
Cooking time: 20 minutes
Preparation time: 15 minutes

Ingredients:
2 slices of wholemeal bread from a small 400g loaf
Cajun seasoning
Fry Light
200g mushrooms, left whole and wiped clean
2 eggs, beaten

To serve
A pinch of paprika

Method:

1.

Make breadcrumbs from the bread using a food processor, or hand blender.

2.

Once blended, add approximately 1 tablespoon of Cajun seasoning to the breadcrumbs

3.

Spray a non-stick baking tray with Fry Light, dip the mushrooms into the egg and then into the breadcrumbs, ensuring they are fully coated and place them on to the baking tray.

4.

Bake in a hot oven until crisp and golden, and serve with a tasty dip.

Tip: Make a Free mayo dip by mixing very low fat fromage frais, 2 tbsp white wine vinegar and 2 tsp granulated artificial sweetener. Blend 1 tsp mustard powder with 1 tsp water and stir into the dressing.
