Preheat your oven to 200\u00b0C\/fan 180\u00b0C\/gas 6. Spread the chips on a large, non-stick baking tray in a single layer. Spray with low-calorie cooking spray and bake for around 40 minutes until golden, turning halfway.&nbsp;<\/p>\n\n\n\n<p>2. When the chips have been cooking for 30 minutes, spray a large, non-stick wok or frying pan with low-calorie cooking spray and put it over a medium-high heat. Stir-fry the onion and pepper for 5-6 minutes or until softened and a little coloured, then stir through the spring onions and set aside.&nbsp;<\/p>\n\n\n\n<p>3. Once the chips are cooked, toss with the veg.
