Fantastically filling and packed with wonderfully warming flavours, a Slimming World chickpea curry is a quick and easy meal that\u2019s perfect for busy weeknights \u2013 or for a fuss-free Friday night fakeaway.<br><\/p>\n\n\n\n<p>Curries are a brilliant, budget-friendly way to spice up your store-cupboard staples (as well as any leftover chicken or vegetables you\u2019ve got in the fridge) and make a tasty meal. This recipe takes a handful of basic ingredients \u2013 chickpeas, spinach, cauliflower and chopped tomatoes \u2013 sprinkle over some spices, and in half an hour there\u2019s a delicious chickpea and spinach curry, ready to serve.<br><\/p>\n\n\n\n<p>Even better, this Slimming World chickpea curry is vegan-friendly and, if you double up on the ingredients, you can freeze any leftovers to keep as a handy lunch option if you\u2019re working from home, or a quick, healthy dinner if you\u2019re a key worker coming in late after a busy shift.&nbsp;<br><\/p>\n\n\n\n<p>Serve with rice (couscous or cauliflower rice taste just as good \u2013 or you could even enjoy this satisfying curry without a side) and a dollop of fat-free natural yogurt, and this chickpea and spinach curry is sure to hit the spot.<br><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Slimming World chickpea curry recipe<\/strong><br><\/h2>\n\n\n\n<p>Serves 1<br>Ready in 30 minutes<br>Free<br><\/p>\n\n\n\n<p><strong>What you need:<\/strong><br><\/p>\n\n\n\n<p>low-calorie cooking spray<br>2 tsp curry powder (heat level to your taste)<br>225g small cauliflower florets<br>215g can chickpeas, drained and rinsed<br>230g can chopped tomatoes<br>50g baby spinach leaves<br>dried chilli flakes, to serve (optional)<br><\/p>\n\n\n\n<p><strong>What you do:<\/strong><br><\/p>\n\n\n\n<p>1. Spray a non-stick saucepan with low-calorie cooking spray and place over a medium heat. Add the curry powder, cook for 1 minute then add 4 tsp of water. Increase the heat to high, bring to the boil and bubble for 1-2 minutes.<\/p>\n\n\n\n<p>2. Add the cauliflower, chickpeas, tomatoes and 5 tbsp of water. Bring back to the boil, then cover, reduce the heat to low and simmer for 15 minutes, or until the cauliflower is tender.<\/p>\n\n\n\n<p>3. Season lightly, stir in the spinach and cook until just wilted.
