Our beef kofta curry is packed full of fragrant flavours (including chilli, ginger, garlic, cinnamon, cardamon and mint \u2013 phew!). There are more than 150 curry creations on the <a href=\"https:\/\/member.slimmingworld.co.uk\/recipes\/overview?query=curry&amp;sort=0\">Slimming World member website<\/a> \u2013 including tikka masala, madras, rogan josh and more \u2013 to help you spice up your life and curry on slimming through every occasion!<\/p>\n\n\n\n<p><strong><a href=\"https:\/\/www.slimmingworld.co.uk\/blog\/how-food-optimising-works-with-ramadan\/\">MORE ON THE BLOG: Discover more about how Food Optimising fits into Ramadan here<\/a><\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Beef kofta curry recipe<\/strong><\/h2>\n\n\n\n<p>serves 4<br>Free<br>ready in 35 minutes<br>freezer-friendly, without the yogurt<\/p>\n\n\n\n<p><strong>What you need:<\/strong><\/p>\n\n\n\n<p>750g lean beef mince (5% fat or less)<br>2 tsp finely grated fresh ginger<br>2 garlic cloves, crushed<br>2 tsp crushed fennel seeds<br>1 tsp ground cinnamon<br>1 tsp mild or medium chilli powder, plus an extra pinch to serve<br>low-calorie cooking spray*<br>500ml carton passata with onions and garlic<br>1 tsp ground cardamom seeds<br>2 tbsp medium curry powder**<br>fat-free natural yogurt, lightly whisked, to serve<br>fresh mint leaves, to serve<\/p>\n\n\n\n<p><strong>What you do:<\/strong><\/p>\n\n\n\n<p>1. Put the mince in a bowl with the ginger, garlic, fennel seeds, cinnamon and chilli powder and season lightly. Using your hands, mix until everything\u2019s well combined and roll into 40 walnut-size balls.<\/p>\n\n\n\n<p>2. Spray a large non-stick frying pan (use one you can put some kind of a lid on as you\u2019ll need to cover it later) with low-calorie cooking spray and place it over a medium heat. Add the meatballs and fry in batches for 4-5 minutes or until lightly browned then transfer to a plate.<\/p>\n\n\n\n<p>3. Pour the passata into the pan, add the cardamom seeds and curry powder and bring to the boil. Reduce the heat to a simmer, season lightly and return the meatballs to the sauce. Cover and cook gently for 15 minutes, turning the meatballs occasionally.<\/p>\n\n\n\n<p>4.
