And, in celebration of St Patrick\u2019s Day and the Emerald Isle, we\u2019ve added a fun twist \u2013 shamrock-shaped croutons!&nbsp;<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><a href=\"https:\/\/www.slimmingworld.co.uk\/what-can-i-eat\"><img loading=\"lazy\" decoding=\"async\" width=\"500\" height=\"122\" src=\"https:\/\/www.slimmingworld.co.uk\/wp-content\/uploads\/2025\/01\/EatRealFood-SmallCTA_SlimmingWorldBlog2.jpg\" alt=\"eat real food - small CTA\" class=\"wp-image-11412\"\/><\/a><\/figure><\/div>\n\n\n<p><strong><a href=\"https:\/\/www.slimmingworld.co.uk\/blog\/slimming-world-irish-stew-and-colcannon\/\">More on the blog: This Irish stew and colcannon recipe makes a delicious dinner<\/a><\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Slimming World shamrock soup&nbsp;<\/h2>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"500\" height=\"500\" src=\"https:\/\/slimmingworld.co.uk\/wp-content\/uploads\/2023\/03\/spinach-sage-potato-soup-body_sw_blog.jpg\" alt=\"Slimming World shamrock soup\" class=\"wp-image-6448\"\/><\/figure><\/div>\n\n\n<p>serves 4&nbsp;<br>3 Swips per serving&nbsp;<br>ready in 35 minutes &nbsp;<br>vegan&nbsp;<br>freezer-friendly&nbsp;<\/p>\n\n\n\n<p><strong>What you need:&nbsp;<\/strong><\/p>\n\n\n\n<p>low-calorie cooking spray&nbsp;<br>2 red onions, finely chopped&nbsp;<br>3 garlic cloves, crushed&nbsp;<br>15g fresh sage leaves&nbsp;<br>500g large potatoes, peeled and diced&nbsp;<br>1.5 litres vegetable stock (suitable for vegans)&nbsp;<br>250g baby leaf spinach&nbsp;<br>4 slices wholemeal bread from a small 400g loaf&nbsp;<\/p>\n\n\n\n<p><strong>What you do:&nbsp;<\/strong><\/p>\n\n\n\n<p>1. Spray a large saucepan with low-calorie cooking spray and heat gently. Add the onions and cook for 2-3 minutes. Stir in the garlic and sage and 4 tablespoons of water and cook for 2-3 minutes or until the water has evaporated.&nbsp;<\/p>\n\n\n\n<p>2. Add the potatoes and stock. Bring to the boil, cover and simmer for 15 minutes or until the potatoes are tender. Stir in the spinach and cook for 5 minutes or until wilted. Pur\u00e9e with a stick blender or whizz in batches in a food processor, and season to taste. Keep warm.&nbsp;<\/p>\n\n\n\n<p>3. Now make the croutons. Toast the bread and cut 3 shamrock shapes out of each slice. (We found a shamrock cutter online \u2013 but circle, square or any other shape croutons will taste just as good!). Cut the rest of the bread into small chunks.&nbsp;<\/p>\n\n\n\n<p>4.
