Here\u2019s a \u2018sneak peek\u2019 recipe for you to follow&#8230;&nbsp;<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><a href=\"https:\/\/www.slimmingworld.co.uk\/group-or-online-membership\"><img loading=\"lazy\" decoding=\"async\" width=\"500\" height=\"100\" src=\"https:\/\/slimmingworld.co.uk\/wp-content\/uploads\/2023\/06\/generic-CTA-join-group-Red-23.jpg\" alt=\"\" class=\"wp-image-6905\"\/><\/a><\/figure><\/div>\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ratatouille pasta bake video<\/h2>\n\n\n\n<figure><iframe loading=\"lazy\" src=\"https:\/\/players.brightcove.net\/5245389806001\/default_default\/index.html?videoId=6330984529112\" allowfullscreen=\"\" allow=\"encrypted-media\" width=\"960\" height=\"540\"><\/iframe><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Ratatouille pasta bake recipe\u00a0<\/h2>\n\n\n\n<p>serves 4&nbsp;<br>ready in 1 hour 15 mins&nbsp;<br>6 Syns per serving &nbsp;<br>vegetarian&nbsp;<\/p>\n\n\n\n<p><strong>What you need:&nbsp;<\/strong><\/p>\n\n\n\n<p>low-calorie cooking spray &nbsp;<br>2 red peppers, deseeded and chopped into chunks &nbsp;<br>2 red onions, cut into wedges &nbsp;<br>2 aubergines, chopped into chunks &nbsp;<br>2 courgettes, chopped into chunks &nbsp;<br>2 x 400g cans chopped tomatoes &nbsp;<br>2 garlic cloves, crushed &nbsp;<br>300g dried pasta shapes (we used fusilli) &nbsp;<br>280g reduced-fat mozzarella, torn into small pieces &nbsp;<br>\u00bd small pack fresh basil, to serve &nbsp;<br>80g rocket, to serve&nbsp;<\/p>\n\n\n\n<p><strong>What you do:&nbsp;<\/strong><\/p>\n\n\n\n<p>1. Preheat your oven to 200\u00b0C\/fan 180\u00b0C\/gas 6 and spray a large, non-stick baking tray with low-calorie cooking spray. Add the peppers, onions, aubergines and courgettes and spread them out. Spray the veg with low-calorie cooking spray and roast for 40 minutes, until caramelised and soft, turning halfway.&nbsp;&nbsp;<\/p>\n\n\n\n<p>2. While they\u2019re roasting, put the tomatoes in a large non-stick saucepan along with the garlic. Bring to a simmer and cook for 10 minutes, until reduced and thickened. Season lightly and set aside. Now boil the pasta for 3 minutes less than the pack instructions (it will finish cooking in the oven), then drain and toss into the tomato sauce.&nbsp;&nbsp;<\/p>\n\n\n\n<p>3. Once the vegetables are ready, stir them through the pasta mixture, then spoon everything into a large baking dish. Evenly scatter over the mozzarella and bake for 20-25 minutes or until the mozzarella has melted and is turning golden. Season with freshly ground black pepper and scatter over the basil leaves.
