This sizzling side dish is ready from pan-to-plate in three minutes.
- 3 garlic cloves
- 2 red chillies
- 1 red onion
- 2 green peppers
- 200g thin-stemmed broccoli
- 150g kale
- low-calorie cooking spray
- The juice of a lemon
- Finely slice the garlic cloves and roughly chop the chillies (keep the seeds in if you prefer it hot). Then prepare your vegetables: thinly slice the onion; deseed and roughly chop the peppers; trim the broccoli, and roughly chop the kale.
- Spray a large frying pan with low-calorie cooking spray and place over a medium-high heat. Add the garlic and chilli and fry for 1 minute. Add the onion, peppers and broccoli with 100ml water and fry for 2-3 minutes. Stir in the kale and fry for 2 more minutes. Season well, add a squeeze of lemon juice and serve immediately.
