This traditional Scottish soup is perfect for lunch or a wintery warming snack!

ingredients

  • 500g skinless and boneless chicken breasts, cut into bite-sized pieces
  • 2 onions, peeled and finely chopped
  • 2 carrots, peeled and sliced
  • 1 litre chicken stock
  • 500g leeks, trimmed and finely sliced
  • 2 tbsp freshly chopped parsley
  • salt and freshly ground black pepper

method

  1. Place the chicken, onions, carrots and stock into a heavy-based pan and bring to the boil. Add the leeks and parsley and bring back to the boil. Reduce the heat to low and cook gently for 25-30 minutes or until the leeks are tender, and the chicken is cooked.
  2. Remove from the heat and season well before serving.
