Change up your breakfast with this fiesta of flavours.


  • low calorie cooking spray
  • 1 large potato, diced
  • ½ tsp dried oregano
  • ½ tsp smoked paprika
  • ½ red pepper, sliced
  • ½ yellow pepper, sliced
  • 2 slices back bacon rashers, visible fat removed
  • 1 egg
  • 1 tsp fresh coriander, chopped


  1. Parboil the potatoes and fry in low-calorie cooking spray with the oregano, smoked paprika and peppers.
  2. Add the sliced bacon, crack in the egg and fry to your liking. Top with the coriander to serve.
