Asian noodle jar

This eye-catching, trendy lunch was just made for sharing on social media… if it survives long enough for you to find your phone!

Ingredients

  • 1 dried rice or wheat noodle nest
  • 1 large carrot, shredded
  • 1 tbsp dark soy sauce
  • Juice of 1 unwaxed lime
  • 1 red chilli, deseeded and finely chopped
  • 2-3 little gem lettuce leaves, shredded
  • ½ papaya, peeled and cut into small chunks (or use 1 small pear)
  • 2 tbsp chopped fresh mint
  • 2 tbsp chopped fresh coriander
  • 2 spring onions, sliced

Method

  1. Prepare the noodles according to the pack instructions.
  2. Meanwhile, put the carrot in a bowl, pour over enough boiling water to cover and leave to stand for 2-3 minutes
  3. Drain the noodles and carrot and layer them up in a 500ml clip-top jar.
  4. Mix the soy sauce, lime juice, chilli, 2 tbsp water and a little seasoning, pour into the jar and leave to cool.
  5. Top with layers of lettuce, papaya, herbs and spring onions. Seal the jar, chill and stir it all together when you’re ready to eat. You can enjoy it straight from the jar, although it’ll be easier to mix it all together if you tip it into a bowl.
