With strawberries, creamy yogurt and crushed meringue, the sweet and simple Slimming World Eton mess recipe is like summer in a bowl!
- 400g strawberries, plus a few finely chopped strawberries to decorate
- 320g any fat-free, no-added-sugar strawberry yogurt
- 400g fat-free natural fromage frais
- 1 level tbsp sweetener
- 4 meringue nests, roughly crushed
Roughly chop the strawberries, put half in a food processor and whizz until you’ve got a smooth purée. Pour into a bowl with the strawberry yogurt and stir well.
Put the rest of the chopped strawberries in a bowl, add the fromage frais and sweetener and stir well. Add to the strawberry purée mixture and swirl through to create a marbled effect.
Fold in the crushed meringue and divide the mixture between 4 chilled dessert glasses. Top with the finely chopped strawberries and serve straight away.
