Slimming World Chicken Sausage recipes

Mediterranean chicken sausage and orzo stew

serves 4
Free
ready in 40 minutes

What you need:

12 Slimming World Chicken Sausages
low-calorie cooking spray
1 large onion, finely chopped
3 garlic cloves, chopped
2 chicken stock cubes, crumbled
300g dried orzo (or other small pasta shapes)
3 tbsp tomato purée
juice of 1 lemon
2 tsp dried sage
½ broccoli head, cut into small florets
1 medium courgette, cut into chunks    
6 tomatoes, diced                                
400g can cannellini beans, drained and rinsed
½ small pack fresh parsley, chopped

What you do:

1. Cook the sausages according to the pack instructions.

2. Meanwhile, spray a large non-stick saucepan with low-calorie cooking spray and put it over a medium heat. Add the onion and garlic and cook for about 10 minutes or until browned all over.

3. Stir the stock cubes into 1.2 litres boiling water and add to the saucepan along with the orzo, tomato purée, lemon juice and sage. Cover and cook for 8 minutes, then add the broccoli and courgette and cook for another 5 minutes or until everything is tender.

4. Cut the sausages into chunks and add to the pan with the tomatoes and beans. Simmer for 5 minutes, then stir through the parsley to serve.

Italian chicken sausage and lentil tray bake

serves 4

ready in 1 hour 15 minutes

What you need:

2 red onions, cut into wedges
250g cherry tomatoes
1 medium butternut squash, peeled, deseeded and diced
1 tbsp balsamic vinegar
low-calorie cooking spray
12 Slimming World Chicken Sausages
3 garlic cloves, chopped
1 chicken stock cube, crumbled
zest of ½ unwaxed lemon and juice of 1
½ tsp dried thyme
400g can chopped tomatoes
2 x 400g cans green lentils, drained and rinsed      
chopped fresh parsley, to serve

What to do:

1. Preheat your oven to 180°C/fan 160°C/gas 4.

2. Put the red onion wedges, cherry tomatoes and half of the squash in a large bowl. Stir through the balsamic vinegar and set aside.

3. Spray a large non-stick saucepan with low-calorie cooking spray and put it over a medium heat. Add the sausages and cook for about 10 minutes or until browned all over, then transfer to a large casserole dish.

4. Add the garlic and remaining squash to the saucepan and cook for 5 minutes, stirring often. Stir the stock cube into 300ml boiling water, add to the pan and cook for 8 minutes or until the squash has softened. Add the lemon zest and juice, thyme, canned tomatoes and lentils and simmer for 5 minutes.

5. Pour the lentil mixture into the casserole dish, covering the sausages. Add the balsamic vegetables on top, along with any balsamic vinegar left in the bowl, and cook in the oven for 30 minutes. 

6. Scatter over the parsley and serve hot, with Speed vegetables.
