Breakfast: Mango and blueberry bowl

Slimming World mango and blueberry bowl

vegetarian

What you need:

40g Dorset Cereals Simply Nutty Muesli (your Healthy Extra ‘b’ choice)
fat-free natural Greek yogurt
fresh blueberries
chunks of fresh mango

What you do:

1. Put the muesli in a bowl and top with the yogurt and fruit. To really wake up your taste buds, add a squeeze of lime!

Lunch: Tuna and corn muffins

What you need:

2 large eggs (beaten)
150g fat-free natural cottage cheese
1 can tuna in spring water or brine, drained
1 can sweetcorn, drained
low-calorie cooking spray

What you do:

1. Mix the eggs with the cottage cheese.

2. Stir in the tuna and sweetcorn and season lightly.

3. Spoon the mixture into the holes of a non-stick muffin tin sprayed with low-calorie cooking spray and cook at 180°C/fan 160°C/gas 4 for 25 minutes, or until set and golden. 

Serve with a salad and follow with a pear.

Dinner: Cajun bacon pasta with ranch dressing

Slimming World cajun bacon pasta

serves 2
ready in 20 mins

What you need:

200g dried pasta shapes
½ cucumber, diced
125g radishes, roughly chopped
2 celery sticks, sliced
6 lean back bacon rashers or medallions, visible fat removed
spring onions, chopped, to serve
fresh chives, snipped, to serve
Cajun seasoning* (see tip)

For the dressing:

5 tbsp fat-free natural fromage frais
1 small garlic clove, crushed
2 spring onions, sliced 
zest and juice of ½ unwaxed lemon

*Tip: Spice blends are Free so long as they’re made from herbs and spices only and don’t include any Synned ingredients like sugar, flour or oil. Check the label to be sure and count the Syns as necessary.

What you do:

1. Cook the pasta according to the pack instructions.

2. Meanwhile, put the cucumber, radishes and celery in a large bowl. Place a non-stick frying pan over a high heat and cook the bacon for 2-3 minutes on each side or until cooked. Chop into chunks and add to the salad bowl.

3. Mix the fromage frais, garlic, sliced spring onions, lemon zest and juice and some freshly ground black pepper together in a bowl and set aside.

4. Drain the pasta, add to the salad and bacon bowl and mix everything together, then stir the dressing through. Divide the salad between 2 bowls and sprinkle with the chopped spring onions, chives and a pinch of Cajun seasoning.
