Our colourful Asian-inspired teriyaki salmon is ready in just 20 minutes, making it the perfect quick supper. Follow it with a bowl of bursting-with-berry-flavours Eton mess, to end your meal on a satisfying sweet note.

Your Fresh Start recipes

Teriyaki salmon noodles

serves 4
ready in 20 mins

What you need:

4 tbsp dark soy sauce
1 garlic clove, crushed 
2.5cm piece of fresh root ginger, grated
500g skinless and boneless salmon fillets, cut into chunks
350g dried egg noodles
low-calorie cooking spray
juice of 1 lime
large pack of Chinese stir-fry vegetables

What you do:

1. Mix the soy sauce, garlic and ginger in a bowl. Add the salmon chunks and stir to coat.

2. Cook the noodles according to the pack instructions and drain well. Meanwhile, spray a non-stick wok with low-calorie cooking spray. Drain the salmon (reserving the marinade) and stir-fry for 3 minutes.

3. Add the marinade to the pan with the lime juice and cook for a further 3 minutes.

4. Steam or stir-fry the Chinese vegetables (using low-calorie cooking spray or a little water) and serve hot, with the salmon and noodles.

What you need:

vanilla extract, to taste
1-2 level tsp sweetener granules, to taste (optional)
a few dollops of fat-free natural Greek yogurt
a handful of fresh or frozen raspberries, defrosted if frozen
1 individual-size meringue nest, broken into pieces

What you do:

1.Add the vanilla extract and a sprinkling of sweetener (if using) to the yogurt and stir well.

2. Layer the raspberries, meringue nest pieces and yogurt in a bowl – then grab a spoon and dig in!
