Is it a drink or a pud? Whatever your view, one thing’s for sure – ice cream floats are ideal for hot summer days. We’ve combined diet fizzy pop (Free when you’re Food Optimising 😉) with a couple of scoops of Slimming World vanilla ice cream, for a refreshingly retro dessert that’ll help you stay cool without putting your weight loss dreams on ice.

Cherry cola float recipe

serves 2
2½ Syns per serving
ready in 10 minutes, plus freezing
vegetarian

What you need:

2 x 330ml cans diet cherry cola
2 fresh cherries, to serve

For the ice cream:

350g fat-free, no-added-sugar vanilla yogurt
500g fat-free natural fromage frais
2 level tbsp maple syrup
1 tbsp vanilla extract

What you do:

1. First, make the ice cream. Mix all the ingredients in a large bowl, then spoon into a large lidded freezer-proof container and freeze until solid (about 1½-2 hours).

2. Tip the mixture into your food processor and whizz to a thick, slushy purée. Return to the container and freeze again until solid. Repeat this process twice more at 1 to 2-hour intervals.

3. Remove from the freezer 10 minutes before you want to eat, so that the ice cream is soft enough to scoop.

4. Pour the cola into tall glasses and add 2 x 50g scoops of ice cream to each glass (this recipe makes 16 x 50g scoops, so you’ll have plenty left over to enjoy another time). Top with the cherries to serve.
