Yes you can enjoy a slimming-friendly slice of the Coronation celebrations! Our version of the official Coronation recipe is just as tasty without the pastry, and uses fat-free natural cottage cheese instead of double cream. This lighter quiche is perfect for parties, picnics and afternoon teas – and will keep you feeling royally fantastic for the Bank Holiday weekend and beyond…

serves 4 
6 Syns per serving (deduct 6 Syns if using Cheddar as a Healthy Extra ‘a’ choice) 
ready in 1 hour 

What you need:

250g baby spinach 
150g fresh broad beans, outer pods removed  
6 eggs 
2 tbsp chopped fresh tarragon 
300g fat-free natural cottage cheese 
120g Cheddar, grated 

What you do:

1. Preheat your oven to 180°C/fan 160°C/gas 4. 

2. Put the spinach in a colander and pour over boiling water. Allow to cool, then squeeze out as much liquid as possible and roughly chop.  

3. While the spinach is cooling, cook the broad beans for 3-4 minutes in a pan of boiling water. Leave to cool, then double pod them (squeeze the beans to release the bright green inner beans and discard the skins).  

4. Beat the eggs in a large bowl and add the tarragon, cottage cheese, half the Cheddar and a twist of black pepper (optional). Stir to mix well. 

5. Scatter the broad beans into the egg mixture, followed by the spinach, and gently stir to combine. 

6. Pour the mixture into a quiche dish (we used a 24cm glass one) and sprinkle with the rest of the cheese. 

7. Bake for 35-40 minutes or until just set. This is delicious with a big Speed salad, and can be enjoyed warm or cold. It will keep for up to 3 days in an airtight container in the fridge.
