We love pasta at Slimming World. It’s cheap to buy, quick to make and, best of all, it’s a Slimming World Free Food, so you can eat as much as you like to satisfy your appetite! 

This spicy sausage pasta is packed with flavour and makes a great addition to any meal plan – plus, it’s easy to adapt to a vegetarian or vegan diet.

Spicy sausage pasta recipe 

serves 4

Tip: Use vegetarian/vegan sausages (counting the Syns) to make this recipe meat-free. 

What you need: 

6 Slimming World Pork Sausages (from the Slimming World food range, available at Iceland and The Food Warehouse – or use other low-fat sausages and count the Syns)  
one cal cooking spray  
1 large onion, finely chopped  
2 large peppers, deseeded and cut into chunks  
2 garlic cloves, crushed  
1 medium courgette, cut into chunks  
1 tsp hot smoked paprika  
½ tsp chilli powder  
2 x 400g cans chopped tomatoes  
1 tsp red wine vinegar  
1 tsp dried oregano  
½ tsp dried basil 
400g dried pasta of your choice (we used penne) 
chopped fresh parsley, to serve 

What you do: 

1. Cook the sausages according to the pack instructions.  

2. At the same time, spray a large non-stick frying pan with low-calorie cooking spray and put it over a medium heat. Cook the onion, peppers and garlic for 4-5 minutes or until soft. Add the courgette and spices and cook for a further minute.  

3. Stir in the tomatoes, vinegar and dried herbs and bring to the boil, then reduce the heat and simmer for 15 minutes, stirring occasionally.  

4. Meanwhile, cook the pasta according to the pack instructions and drain well.  

5. Cut the sausages into chunks and combine with the sauce and pasta. Divide between bowls and sprinkle over the fresh parsley (if you fancy a little Parmesan, count 1 Syn per level tbsp). Serve with a mixed salad, if you like.
