Does salt and pepper chicken come top of your takeaway menu? Our brand-new addition to the Slimming World frozen food range (available at Iceland and the Food Warehouse) is a fabulously slimming-friendly alternative.
If you’d prefer to make your own, this salt and pepper chicken recipe is super simple. Just throw everything into a bowl, marinate, and cook!
Serve with egg fried rice and stir-fried veg for a Chinese-style supper. Or, throw your homemade kebabs on the barbecue for a flame-grilled feast from the East!
Salt and pepper chicken skewers recipe
Serves 4

ready in 45 mins (plus marinating)
What you need:
1/2 tsp garlic granules
1/3 tsp onion granules
1/4 tsp ground cumin
1/4 tsp Chinese five-spice powder*
1/2 tsp salt
2/3 tsp black peppercorns, crushed
600g skinless and boneless chicken breasts, cut into large chunks
*Watch out for spice/seasoning blends that have added ingredients (like sugar, oil or starch). To protect your weight loss, count ½ Syn per level tsp/1½ Syns per level tbsp.
What you do:
1. Mix together the garlic granules, onion granules, cumin, five-spice, salt, pepper and 3 tbsp water in a large bowl. Add the chicken, stir well and leave to marinate in the fridge for at least 1 hour if possible (or overnight for the very best flavour).
2. Preheat your oven to 200°C/fan 180°C/gas 6.
3. Thread the chicken chunks onto 4 long skewers (if you’re using wooden skewers, soak them in warm water for at least 20 minutes first, so they don’t burn). Spread out the skewers on a non-stick baking tray and cook on the middle shelf of the oven for 35 minutes or until cooked through. Serve with your favourite vegetables.
