When it comes to classic puds, egg custard is one of my all-time favourites. What’s not to love about a sweet, silky smooth custard, lightly spiced with cinnamon and nutmeg? If the return of the Great British Bake Off has inspired you to pull on your apron, this Slimming World egg custard recipe will surely be going straight to the top of your ‘must make’ list.

Our four-step egg custard recipe is surprisingly simple. It takes less than 15 minutes to mix it all together – so you won’t need to spend ages in the kitchen – and then you just pop it in the oven for an hour and put your feet up (or enjoy a spot of Body Magic!). Best of all, most of the ingredients are probably already in your cupboard, making it the perfect pudding for slimmers on a budget.

Because it’s served in a ramekin instead of the traditional pastry casing, this egg custard recipe fits in with Slimming World’s healthy eating plan. Slimming World egg custard

makes 4
2½ Syns per serving
ready in 1 hour 15 minutes, plus chilling
vegetarian

What you need:

4 medium eggs
600ml skimmed milk
1 tsp vanilla extract
3 level tbsp sweetener granules
½ tsp ground cinnamon, plus a little extra to decorate
grated zest and juice of 1 orange
pinch of ground nutmeg
200g mixed fresh raspberries, blueberries and hulled and halved strawberries, to serve

What you do:

1. Preheat your oven to 180°C/fan 160°C/gas 4. In a large mixing bowl, whisk the eggs until frothy.

2. In a saucepan, heat the milk, vanilla, sweetener and half the cinnamon until nearly boiling, then slowly drizzle into the eggs, whisking continuously.

3. Strain the mixture through a sieve into a large measuring jug. Stir in the orange juice and most of the zest, then divide the mixture between 4 ramekins and place on a baking tray. Sprinkle with the nutmeg and bake for 50-60 minutes, or until just set.

4. Leave to cool, then chill for 3-4 hours. Sprinkle with the remaining cinnamon and orange zest and serve with the mixed berries.
