Our head of food and publications (and chief curry taster!), Allison Brentnall, tells us more…
“We know that our members love a good curry (the chicken tikka masala is one of the most popular meals in the Slimming World food range!), so we were keen to offer an even better Indian menu. This month, a new and improved beef madras and vegetable biryani, and two totally new dishes, chicken jalfrezi and chicken korma, landed in Iceland stores.
I’m really excited to see what our members think of the chicken korma. This creamy-tasting dish is normally one of the highest Synned curries on an Indian menu, so to be able to offer a completely Free version that has all the spice and none of the Syns is a real achievement for our food team.
When developing these new recipes, we worked really hard with our specialist spice house to create well-balanced curry pastes. The aim was to deliver an authentic, well-rounded hit of spices that any curry house worth its salt would be proud of. It’s been a real challenge as, in traditional Indian cooking, you’d normally start your recipe by cooking your spices in oil. Going without the oil can cause a harsh kick from the spices, so we had to find a way to avoid this and keep that lovely warming depth of flavour.
After a lot of testing and tasting, we’re really pleased with how the curry pastes turned out. We’re now hoping to use them to develop some new, improved cooking sauces for those members who’d like a helping hand with their home-made curries – so keep an eye out for those!
These Slimming World fakeaways are great to have in the freezer for those times you want a curry in a hurry. They can be cooked from frozen in just 12 minutes – much less time than it takes for the local takeaway to deliver! My personal favourite is the brand-new chicken jalfrezi. I love a decent hit of heat and the contrast of the sweet peppers with the medium spicy sauce makes it my quick and easy go-to at the end of a busy week.
When I have more time to spend in the kitchen, I like to cook my curries from scratch. As with all of our food range, we print the full recipe on the packaging, giving you the option to make it yourself next time. You’ll also find links to all of these curry recipes in this post.
