A royal celebration calls for a crowd-pleasing trifle recipe, and our slimming-friendly pud is definitely fit for a King (or Queen). Layered with sugar-free jelly, juicy strawberries and lightly spiced custard, this coronation trifle fits perfectly into our Food Optimising eating plan. Coronation trifle recipe

Coronation trifle

serves 8
6 Syns per serving
ready in 20 minutes, plus cooling and setting

What you need:

70g ginger cake, cut into chunks
2 x 11.5g sachets sugar-free strawberry jelly crystals
200g fresh strawberries, halved or thickly sliced
300g low-fat custard from a can or carton
300g plain quark
1 ball of stem ginger from a jar, finely chopped, plus 1 level tbsp syrup from the jar
75g reduced-fat aerosol cream
20g roughly chopped pistachio nuts, to sprinkle

What you do:

1. Put the ginger cake chunks in a straight-sided 1.5 litre trifle dish (or any round dish about that size).

2. Mix the jelly crystals with 300ml boiling water, then top up with a further 300ml cold water. Pour a little bit over and around the cake to just cover the base, then cool slightly and chill for 15 minutes or until just set.

3. Add the strawberries and pour the rest of the jelly over them, then cool slightly and chill until completely set – this will take about 30 minutes.

4. Mix the custard, quark, stem ginger and ginger syrup in a bowl. Spoon it over the set jelly and chill for 30 minutes.

5. Squirt the cream on top in small neat blasts and sprinkle with the nuts to serve.
