Marry me chicken pasta recipe

serves 2
ready in 20 minutes
2 Syns per serving

What you need:

low-calorie cooking spray
2 skinless and boneless chicken breasts, cut into strips
2 garlic cloves, crushed
50g sundried tomatoes, finely chopped
1 tsp paprika
1 tsp dried oregano
150ml hot chicken stock
zest and juice of ½ unwaxed lemon
150g dried tagliatelle
200g plain quark
large handful spinach
handful fresh basil leaves, to serve

What you do:

1. Spray a non-stick frying pan with low-calorie cooking spray and put it over a medium heat. Add the chicken and cook for 5 minutes, or until browned. Add the garlic, sundried tomatoes, paprika and oregano and cook for a further minute or so, before adding the stock and lemon zest and juice. Simmer for 5 minutes.

2. Meanwhile, cook the tagliatelle according to the pack instructions.

3. Stir the quark and spinach into the sauce and mix well. Season lightly and cook for a minute or so to wilt the spinach.

4. Add the pasta to the pan and stir it through the sauce until fully coated. Divide between 2 bowls and top with the basil leaves. Serve with your favourite Speed veg or salad, if you like.
