Slimming World spooky pizzas recipe

makes 2 pizzas
ready in 40 mins
7 Swips per pizza (deduct 7 Swips if using a Healthy Extra fibre choice) – plus cheese and toppings
What you need
For the base:
90g wholemeal bread flour
1½ tsp baking powder
110g fat-free natural Greek yogurt
For the sauce:
400g chopped tomatoes
2 tbsp tomato puree
1 crushed garlic clove
a handful of basil leaves
1 tsp dried oregano
½ tsp sweetener
For the toppings:
We’ve topped one pizza with cheddar and one with mozzarella (using half a Healthy Extra choice on each) and counted Swips for pepperoni (Slimming World members can use the food search tool to find more info on Healthy Extra choices and Swip values)
What you do
For the base:
1. Mix 90g wholemeal bread flour, 1½ tsp baking powder and 110g fat-free natural Greek yogurt in a bowl. Cover and set aside for 10 minutes.
2. Divide the dough into two equal pieces, then roll out each piece between two sheets of baking paper into a circle around 20cm wide. At this point, we shaped ours into a pumpkin and a ghost… that’s totally optional.
3. Peel off the top sheet of baking paper, then bake for 5 minutes at 220C/fan 200. Once they’re done, peel off the rest of the paper and place on a cooling rack.
4. Stir together 400g chopped tomatoes, 2 tbsp tomato puree, 1 crushed garlic clove, a handful of basil leaves, 1 tsp dried oregano and ½ tsp sweetener in a small pan. Simmer for 15 minutes over a low heat.
5. Take the pan off the heat and blitz until smooth. This makes enough for four pizzas, so you could freeze to remainder for another day.
6. Add your favourite toppings! We used half a healthy extra choice of cheese for our pizzas, as well as Swips for pepperoni.
