As the weather starts to change, we’re edging closer to pumpkin season! This overnight oats pot brings all the autumnal flavours, including pumpkin spice, fresh apple and sweet pumpkin puree. It’s filling, you can make it in advance – and it’s oatally delicious!

Pumpkin pie overnight oats recipe
makes 4 pots

ready in 15 mins (plus overnight soaking)

Tip: These handy grab-and-go breakfast pots will keep in the fridge for up to 48 hours
What you need:
160g plain porridge oats (avoid jumbo oats, as they don’t soak as well)
1 tsp ground cinnamon, plus extra to serve
1 tsp mixed spice
1 tsp vanilla extract
300g plain unsweetened soya yogurt
6 tbsp 100% pure pumpkin puree from a can
1 level tsp sweetener granules
2 apples, cored, 1 finely chopped, 1 finely sliced
squeeze of fresh lemon juice
1 level tbsp smooth almond butter, made with 100% nuts
What you do:
1. The night before, tip the oats into a mixing bowl with half the spices, the vanilla extract, 200g yogurt and 250mil cold water. Put the remaining yogurt in another bowl and add the rest of the spices, and the pumpkin puree and sweetener. Stir until smooth.
2. Divide half the oats between four jars or glasses, then stir in half the chopped apple. Top with the pumpkin mixture, then divide over the remaining oats and chopped apple. Seal or cover the jars, and chill overnight.
3. The next day, toss the sliced apple with the lemon juice to stop it from browning. Top the overnight oats with the sliced apple and equally divide over the almond butter. Finish with a sprinkle of ground cinnamon and serve.
