Hands up, who’s surprised that you can enjoy a big plate of vegetable lasagne and still lose weight? New Slimming World members are often blown away by the fact that pasta is one of the Free Foods you can fill up on until you’re fully satisfied – with no weighing, measuring or counting.

Although this vegetable lasagne takes a while to cook, it’s really simple to pull together – you can even make it ahead of time and keep a batch in the freezer for those really busy days. This recipe is easy to adapt, too. Just use whichever veggies you have in your fridge and you’ll be sure of a tasty vegetable lasagne that’s perfect if you’re celebrating National Vegetarian Week or just looking to add more meat-free days to your meal plan.

Vegetable lasagne recipe

serves 4
1 Syn per serving
Vegetarian, freezer-friendly
ready in 1 hour 20 mins

What you need:

110g mushrooms, quartered
2 large onions, chopped
150ml passata
110g courgettes, sliced
110g aubergines, sliced
½ red pepper, deseeded and sliced
½ yellow pepper, deseeded and sliced
110g baby sweetcorn
2 x 400g cans chopped tomatoes
½ level tsp sweetener
12 dried lasagne sheets
500g fat-free natural fromage frais
25g reduced-fat Cheddar cheese, grated

What you do:

1. Preheat your oven to 190°C/fan 170°C/gas 5. Dry-fry the mushrooms and 1 of the onions in a large non-stick saucepan over a medium heat for 5 minutes or until starting to soften. Add the passata, season to taste and stir in the courgettes, aubergines, peppers and baby sweetcorn. Simmer for 20 minutes.

2. Meanwhile, add the remaining onion, tomatoes and sweetener to another saucepan, place over a high heat and season to taste. Bring to the boil, then reduce the heat slightly and simmer for 10 minutes.

3. Spoon 4-5 tbsp of the tomato mixture into a lasagne dish. Add 3 sheets of lasagne and then a layer of the vegetables. Continue layering this way until you’ve used all the ingredients, then pour the fromage frais over the top, sprinkle with the cheese and bake for 30-40 minutes until golden brown and bubbling. Serve hot, with a mixed salad.
