When the sun is shining, a fresh, flavour-packed salad can hit the spot – and this rice-based dish is light but still super-satisfying.
Perfect for picnics, packed lunches and those days when you just want to eat outside, we think it’s a warm weather winner!
Slimming World salmon and feta rice salad recipe
serves 2
6 Swips per serving (deduct 6 Swips if using the reduced-fat feta as a Healthy Extra choice)
ready in 30 mins
What you need:
140g dried long-grain rice
1 medium red pepper, deseeded and diced
½ small cucumber, diced
2 tomatoes, deseeded and diced
170g can salmon, drained
4 tbsp fat-free natural yogurt
1 tbsp lemon juice
130g reduced-fat feta
chopped fresh parsley, to serve
What you do:
1. Cook the rice according to the pack instructions, drain and leave to cool.
2. In a large mixing bowl, combine the cooled rice with the pepper, cucumber, tomatoes and salmon.
3. In a small bowl, mix together the yogurt and lemon juice and season with black pepper.
4. Divide the rice salad between two bowls. Drizzle with the dressing, evenly crumble on the feta and scatter over the parsley to serve.
