Chicken and pesto
Make lunchtimes that little bit more luxurious with a tasty Italian twist on a classic chicken salad.

Tuna Marie Rose and cucumber
Tuna works wonderfully with this creamy sauce and crunchy salad veg.
6 Syns (or Free if you have the roll as a Healthy Extra ‘b’ choice)
serves 1
ready in 10 mins

In a bowl, mix together 3 tbsp fat-free natural fromage frais, 1 tbsp finely chopped fresh dill, 1 tbsp tomato purée and 1 tsp lemon juice. Drain 50g of tuna canned in brine or spring water, add it to the bowl, season lightly and mix well.
Split a 60g wholemeal roll in half and lay a few cucumber slices on the base. Spoon on the tuna mixture, garnish with a little more dill and top with the roll lid.
‘Chuna’ mayo
Chickpeas replace the tuna in this vegan version of a lunchtime favourite.

serves 2
ready in 15 mins
In a mixing bowl, crush 400g chickpeas (canned and drained) using a potato masher or fork until broken down. Add ½ small red onion, 1 tbsp capers, 1 tbsp vegan mayonnaise, 2 tbsp soya yogurt (plain, with added calcium) and 1 tbsp lemon juice. Season lightly and mix well to combine.
Spread the filling across 2 slices of bread, add the rocket and top with the remaining 2 slices.

Pastrami reuben
Take a bite of the Big Apple with our New York-inspired sarnie, taken from our Out & About cookbook (available for members to buy in group or for online members to order from the e-shop).
11½ Syns per serving (or 5 Syns if using rye bread as a Healthy Extra ‘b’ choice)
serves 1
ready in 10 mins
Combine 1 tbsp extra-light mayonnaise, 1 tsp ketchup, ¼ tsp Worcestershire sauce and ¼ tsp sriracha sauce in a bowl to create a ‘Russian dressing’. Season to taste and spread over the 2 small slices of rye bread (60g total).
Fill your sandwich with 3 slices of pastrami, 15g gruyere cheese, 2 gherkins (drained and thinly sliced) and 2 tbsp sauerkraut.
