Deduct 7 Swips if using pitta bread wholemeal as a Healthy Extra fibre choice.
- 400g can chickpeas, drained, rinsed and patted dry with kitchen paper
- 400g can green lentils, drained, rinsed and patted dry with kitchen paper
- 2 garlic cloves, crushed
- 50g rocket leaves
- 3 spring onions, roughly chopped
- Large handful fresh coriander
- Small handful fresh mint leaves
- 1 tsp ground cumin
- Grated zest of 1 unwaxed lemon, plus extra for the yogurt, and wedges to serve
- 1 cal cooking spray*
- 200g soya yogurt, plain and unsweetened, with added calcium (or fat-free natural Greek yogurt if you don't need this to be vegan)
- Pinch of dried chilli flakes (optional)
- 2 x 60g wholemeal pitta breads, halved
