Ready in just 35 minutes, this easy chicken recipe makes a delicious dinner for busy weeknights or even for special occasions (when we’re able to play host again) and, as it uses plain quark to create the creaminess, this Free dish fits into the Food Optimising plan perfectly. Plus, this winner of a chicken dinner is made in one pot, boosting the flavours and saving you time on the washing-up.
We think this Slimming World creamy garlic chicken works well with roasted peppers and asparagus, but it’s also lovely when served with broccoli, green beans or any other veggies you’ve got.
Slimming World creamy garlic chicken
ready in 35 minutes
What you need:
low-calorie cooking spray
1 large onion, finely chopped
1 tsp garlic granules
2 skinless and boneless chicken breasts, thickly sliced
4 back bacon rashers, visible fat removed, roughly chopped
300g button mushrooms, cut in half
100g plain quark
100ml hot chicken stock
1 tsp mustard powder
1 tsp dried parsley
What you do:
- Spray a medium-size, non-stick frying plan with low-calorie cooking spray and place over a low-medium heat. Add the onion and garlic granules and stir-fry for 5 minutes, or until lightly browned.
- Add the chicken, bacon and mushrooms and cook for a further 10 minutes, or until the chicken is cooked.
- Meanwhile, put the quark, chicken stock, mustard powder and a little seasoning in a large bowl. Mix really well to create a thick sauce.
- Add the sauce to the chicken mixture, stir thoroughly and simmer for 5-10 minutes. Sprinkle with the parsley and serve hot, with roasted peppers and asparagus, or seasonal vegetables of your choice.
