Serves 4

Deduct 7½ Swips if using wholemeal bread rolls as a Healthy Extra fibre choice.

  • 300g king oyster or shiitake mushrooms (or any other type that can be shredded)
  • 1 cal cooking spray*
  • 1 small onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 tbsp tomato purée
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ¼ tsp cayenne pepper
  • 4 x 65g wholemeal rolls
  • Lettuce leaves, to serve
  • Free vegan slaw, to serve (we made ours by stirring together shredded carrot, red onion and red cabbage, chopped fresh parsley and plain unsweetened soya yogurt with added calcium)

For the sauce:

  • 250g passata
  • 1 tbsp Henderson’s relish (or Worcestershire sauce if you don’t need this to be vegetarian/vegan)
  • 1 tbsp balsamic vinegar
  • ½ tsp mustard powder
  • 1 level tsp sweetener
