  • 750g large new potatoes
  • Low-calorie cooking spray
  • 160g sugar snap peas
  • 12 Slimming World sausages, defrosted (or use other low-fat sausages and count the Syns)
  • 100g watercress
  • 1 bunch spring onions, thinly sliced
  • 1 tbsp red wine vinegar

For the salsa:

  • 1 small fresh ripe pineapple, peeled and finely diced (or 500g fresh ready-chopped chunks, finely diced)
  • 1 red chilli, finely diced
  • 20g fresh coriander, leaves chopped
  • 20g fresh chives, finely chopped
  • 1 red onion, finely chopped
  • Juice of 1 lime
