  • 1 onion, finely chopped
  • 2 celery sticks, finely chopped
  • 1 red pepper, deseeded and diced
  • 1 large carrot, peeled and grated
  • 2 skinless and boneless chicken breasts, cut into bite-size chunks
  • 1 tbsp each of garam masala, garlic granules, ground ginger and dried fenugreek leaves
  • ½ tsp each of ground cumin and cayenne pepper
  • 100ml chicken stock
  • 50g mangetout, halved
  • 3 large mushrooms, thinly sliced
  • 4 large potatoes, peeled and roughly chopped
  • 1 tsp ground turmeric
  • 1 egg, beaten
  • 1 tbsp finely chopped fresh parsley
