  • 1 large sweet potato, peeled and cut into small chunks
  • 1 cal cooking spray*
  • 150g dried long-grain rice
  • 2 large onions, diced
  • 2 medium carrots, peeled and diced
  • 1 vegetable stock cube, suitable for vegans, crumbled
  • 3 garlic cloves, crushed
  • 5 tbsp tomato purée
  • 2 tbsp smoked paprika
  • 2 tsp dried oregano
  • 1 small leek, diced
  • 2 celery sticks, diced
  • 2 x 400g cans black beans, drained and rinsed
  • 1 large yellow pepper, deseeded and diced
  • 4 tbsp dark soy sauce
  • 6 tbsp balsamic vinegar
