  • 2 x 400g cans black beans, drained and rinsed
  • 1 red onion, finely chopped
  • 1 red pepper, deseeded and finely chopped
  • 1 yellow pepper, deseeded and finely chopped
  • 1 carrot, finely diced
  • 1 potato, finely diced
  • 3 garlic cloves, crushed
  • 2 level tsp Cajun seasoning*
  • 400g can chopped tomatoes
  • 1 litre hot vegetable stock, suitable for vegans
  • 50g mangetout, roughly chopped
  • 50g okra, sliced
  • Plain and unsweetened soya yogurt with added calcium and chopped fresh coriander, to serve
  • *Spice blends are free so long as they’re made from herbs and spices only and don't include any Synned ingredients like sugar, flour or oil. Check the label to be sure and count the Syns as necessary.
