- 4 skinless and boneless chicken breasts, cut into bite-size chunks
- 1 litre hot chicken stock
- 4 garlic cloves, crushed
- 5cm piece fresh root ginger, peeled and finely grated
- 75g white miso paste
- 1 small red chilli, deseeded and finely chopped
- 400g mushrooms, sliced
- 4 tbsp soy sauce
- 1 large onion, diced
- 200g dried noodles
- 1 medium carrot, cut into batons
- 410g can bean sprouts, drained and rinsed
- 150g edamame (soya beans)
- 225g can sliced water chestnuts, drained
