Serves 4
- 600g skinless and boneless chicken breasts, cut into strips
- 2 large red peppers, deseeded and thinly sliced
- 2 large red onions, each cut into 8 wedges
- 260g baby corn, halved lengthways
- 2 tsp smoked paprika
- 2 tsp ground cumin
- 2 tsp dried oregano
- Low-calorie cooking spray
- 400g can black beans, drained and rinsed
- 400g can red kidney beans, drained and rinsed
- 1 romaine lettuce, shredded
- 4 tbsp fat-free natural Greek yogurt, to serve
For the salsa:
- 300g tomatoes, roughly chopped
- 1 small red chilli, deseeded and finely chopped
- Grated zest and juice of 2 unwaxed limes, plus slices
- 2 tbsp chopped fresh coriander, plus sprigs to serve
