  • 300g dried macaroni
  • Low-calorie cooking spray
  • 1 large pepper (red, yellow or green), deseeded and roughly chopped
  • 2 medium leeks, sliced
  • 200g baby spinach
  • 250g leftover cooked lean ham, visible fat removed, torn into bite-size pieces
  • 2 level tbsp grated fresh Parmesan

For the sauce:

  • 500g plain quark
  • 200ml skimmed milk
  • ½ tsp ground nutmeg
  • 2 level tbsp Dijon mustard
  • 90g mature Cheddar, grated
  • 4 level tbsp cornflour
