  • 1 cal cooking spray*

For the potatoes:

  • 1kg large floury potatoes, such as Maris Piper or King Edward, thickly sliced lengthways
  • 1 tbsp dried mixed herbs

For the chilli:

  • 4 shallots, finely chopped
  • 2 garlic cloves, crushed
  • 2 celery sticks, diced
  • 1 large carrot, diced
  • 1 red pepper, deseeded and diced
  • 1 tsp each of dried mixed herbs, ground cumin, ground cinnamon and chilli powder
  • 400g can chopped tomatoes
  • 200ml hot vegetable stock (suitable for vegans)
  • 400g can black-eyed beans in water, drained
  • 400g can red kidney beans in chilli sauce
  • 4 tbsp finely chopped fresh coriander leaves
  • Lime wedges, to serve
