  • 1 small onion, finely chopped
  • 2 garlic cloves, chopped
  • 2 medium peppers, deseeded and chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tsp smoked paprika
  • 100ml hot vegetable stock, suitable for vegans
  • 400g can chopped tomatoes
  • 2 level tsp chipotle chilli paste (or 1 level tsp if you don’t like a lot of heat)
  • 2 x 400g cans mixed beans in chilli sauce
  • 20g dark chocolate, suitable for vegans, grated
  • Fresh coriander sprigs, to serve
