- 1 small onion, finely chopped
- 2 garlic cloves, chopped
- 2 medium peppers, deseeded and chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 2 tsp smoked paprika
- 100ml hot vegetable stock, suitable for vegans
- 400g can chopped tomatoes
- 2 level tsp chipotle chilli paste (or 1 level tsp if you don’t like a lot of heat)
- 2 x 400g cans mixed beans in chilli sauce
- 20g dark chocolate, suitable for vegans, grated
- Fresh coriander sprigs, to serve
- Lime wedges, to serve
