  • 1 garlic clove, finely chopped
  • Juice of 1 lemon
  • 8 thick asparagus spears, woody ends snapped off, each spear cut into 3 or 4 pieces
  • 2 chunky spring onions, cut into similar lengths as the asparagus
  • 1 red and 1 orange pepper, deseeded and cut into bite-size chunks
  • 1 large courgette, cut into bite-size chunks
  • 360g reduced-fat halloumi, cut into 16 chunks
  • 1 cal cooking spray*
