  • 100ml reduced-fat coconut milk
  • 1 vegetable stock cube, crumbled
  • 400g can kidney beans, drained and rinsed
  • 1 tsp roughly chopped fresh thyme leaves
  • 600g skinless and boneless chicken breasts, cut into bite-size chunks
  • 1 medium red onion, cut into thin wedges
  • 130g baby corn, halved lengthways
  • 4 level tsp jerk seasoning*
  • Low-calorie cooking spray
  • 2 limes, halved
  • Salad, to serve
