Serves 4
- 200g dried basmati rice
- 100ml reduced-fat coconut milk
- 1 vegetable stock cube, crumbled
- 400g can kidney beans, drained and rinsed
- 1 tsp roughly chopped fresh thyme leaves
- 600g skinless and boneless chicken breasts, cut into bite-size chunks
- 1 medium red onion, cut into thin wedges
- 130g baby corn, halved lengthways
- 4 level tsp jerk seasoning*
- Low-calorie cooking spray
- 2 limes, halved
- Salad, to serve
- *Watch out for spice/seasoning blends that have added ingredients (like sugar, oil or starch). To protect your weight loss, count ½ Syn per level tsp/1½ Syns per level tbsp.
