- 900g lean leg of lamb, visible fat removed
- 2 medium aubergines
- 1 cal cooking spray*
- 250g baby plum tomatoes, halved
- 200g fat-free natural Greek yogurt
- 2 tbsp chopped fresh mint
- 4 x 60g wholemeal pitta breads, split open
- Sliced spring onions, to serve
- Slimming World chips, to serve
- Salad, to serve
For the shawarma paste:
- 2 tbsp tomato purée
- 2.5cm piece fresh root ginger, peeled and finely grated
- 1 garlic clove, crushed, plus 1 thinly sliced garlic clove for the aubergines
- ½ tsp ground cinnamon
- ½ tsp ground cumin
- ½ tsp ground turmeric, plus ½ tsp for the aubergines
- ½ tsp chilli powder
