  • 900g lean leg of lamb, visible fat removed
  • 2 medium aubergines
  • 1 cal cooking spray*
  • 250g baby plum tomatoes, halved
  • 200g fat-free natural Greek yogurt
  • 2 tbsp chopped fresh mint
  • 4 x 60g wholemeal pitta breads, split open
  • Sliced spring onions, to serve
  • Slimming World chips, to serve
  • Salad, to serve

For the shawarma paste:

  • 2 tbsp tomato purée
  • 2.5cm piece fresh root ginger, peeled and finely grated
  • 1 garlic clove, crushed, plus 1 thinly sliced garlic clove for the aubergines
  • ½ tsp ground cinnamon
  • ½ tsp ground cumin
  • ½ tsp ground turmeric, plus ½ tsp for the aubergines
  • ½ tsp chilli powder
