Serves 4
- 1kg floury potatoes, such as Maris Piper or King Edward, cut into small chunks
- 1 cal cooking spray*
- 3 sprigs of fresh rosemary
- 2 garlic cloves, chopped
- Chopped fresh parsley, to serve
- Lemon wedges from an unwaxed lemon, to serve
For the tomato sauce:
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- ¼-½ tsp dried chilli flakes
- 1 tsp smoked paprika
- 1 tsp balsamic vinegar
- 400g can chopped tomatoes
For the garlic yogurt:
- 200g dairy-free soya yogurt, plain and unsweetened, with added calcium
- 1 garlic clove, crushed
