  • -For the ginger, coriander and tomato salsa:
  • 3 large vine-ripened tomatoes, deseeded and finely chopped
  • ½ red onion, finely chopped
  • 2cm piece fresh root ginger, peeled and diced
  • Small bunch fresh coriander, finely chopped
  • 1 tbsp cider vinegar
  • ¼ level tsp sweetener

For the pineapple and chilli salsa:

  • 250g fresh pineapple, finely diced
  • 1 red chilli, deseeded and finely chopped
  • Small bunch fresh mint, finely chopped
  • Zest and juice of 1 unwaxed lime

For the watermelon and mint salsa:

  • ¼ large watermelon
  • ½ red onion, finely chopped
  • 1 green chilli, deseeded and finely chopped
  • 1 tbsp red wine vinegar
  • Small bunch fresh mint, finely chopped
