  • 250g dried udon noodles
  • 1 cal cooking spray*
  • 250g lean beef mince (5% fat or less)
  • 1 small onion, diced
  • 3 garlic cloves, chopped
  • 3cm piece fresh root ginger, peeled and grated
  • 3 tbsp white miso paste (no oil or sugar)
  • 5 tbsp tomato purée
  • 2 tbsp Chinese five-spice powder*
  • 2 chicken stock cubes, crumbled
  • 2 tbsp soy sauce
  • 2 tbsp Thai fish sauce (nam pla)
  • 3 tbsp rice vinegar
  • 2 skinless and boneless chicken breasts, cut into strips
  • 2 large carrots, cut into batons
  • 2 large peppers (red and yellow), deseeded and diced
