  • 50g strong bread flour
  • ½ x 7g sachet instant active yeast
  • 1 cal cooking spray*
  • ½ red pepper, halved, deseeded and sliced
  • ½ yellow pepper, halved, deseeded and sliced
  • ½ small red onion, cut into thin wedges
  • 1-2 baby courgettes, thinly sliced or peeled into ribbons with a peeler
  • 70g reduced-fat mozzarella, cut into chunks
  • Small handful of fresh basil leaves, to serve

For the tomato sauce:

  • 2 shallots, finely chopped
  • 1 garlic clove, crushed
  • 1 tsp dried oregano
  • 200g canned tomatoes
  • 2 tbsp tomato purée
  • Small handful chopped fresh basil

For the rainbow slaw:

  • ¼ red cabbage, cored and sliced
  • 1 large carrot, shredded
  • 1 fennel bulb, trimmed and shredded
  • 3 tbsp fat-free natural yogurt
  • 1 tbsp chopped fresh parsley
