Serves 4

  • 1 cal cooking spray*
  • 2 large onions, 1 sliced, 1 diced
  • 4 garlic cloves, crushed
  • 5cm piece fresh root ginger, peeled and grated
  • 1 chicken stock cube, crumbled
  • 3 tbsp Chinese five-spice powder (or to taste. If you're not sure, just add a little and try it. You can always add more spice but you can't take it out!)*
  • 150g dried jasmine rice
  • 2 skinless and boneless chicken breasts, cut into strips
  • 1 large carrot, cut into batons
  • 2 peppers (red and yellow), deseeded and diced
  • 125g baby corn, cut into small chunks
  • 4 tbsp soy sauce
  • 4 tbsp rice vinegar
  • Sliced spring onions, to serve
