You wouldn’t necessarily put cottage cheese recipes and desserts together, but this combo works like a dream. A sweet, chocolate-wrapped snack that packs a peanutty protein punch.
Cottage cheese peanut butter bites recipe
makes 4
3½ Swips each (when counting the peanut butter as half a Healthy Extra choice)
ready in 10 minutes (plus one hour in the freezer)
What you need:
150g fat-free natural cottage cheese
50g peanut butter (100% nuts)
two drops of vanilla extract
50g dark chocolate
What you do:
1. Blend the cottage cheese, peanut butter and vanilla extract.
2. Roll into 4 balls and put on a plate with baking paper and freeze for 1 hour.
3. Melt the dark chocolate and dip each ball to coat. Leave to set and pop in the fridge.
